Hello, in printed p 14, line 14 of the spec. What does the “available“ means? Does it mean that for the ingredients in the pantry, not reserved. Or for the real availability, which means you can order the dishes whoes ingredients requirement is more than the pantry?

Available means in the pantry and not yet reserved. The two lines just before line 14 define it:
In parallel to cooking, the cooks also maintain a list of which ingredients are available (i.e., in the pantry and not reserved for other meals) and thus, which dishes can still be ordered.
